How to make Easy Three Ingredient Cookies!

Cookies come in a plethora of forms. Right from the traditionalist butter cookies to the fancier red velvet ones, they are a favorite in every household. We give you three cookie recipes that utilize just 3 basic ingredients! The cookies are just as scrumptious as their fancier, more complex counterparts. They can be put together in a jiffy and utilize ingredients that are easily available in your kitchen. These recipes are perfect for days when you have no time yet want to indulge your sweet tooth.

Each recipe makes approximately 35 cookies

Lemon Infused Butter Cookies

Ingredients:

  • 115 grams unsalted butter, softened at room temperature.
  • 40 grams granulated sugar
  • 130 grams all- purpose flour
  • The zest of a lime (or lemon)
  • Some yellow food color (optional)

Method:

  • In a large bowl, mix the butter, sugar and all- purpose flour with a pastry fork until all the ingredients are well combined. 
  • Add in the zest of one lime.
  • Continue mixing until the dough is able to hold itself together when pressed together. 
  • Roll the dough into long 8-10 inch logs.
  • Cover the dough with a cloth or clingwrap and refrigerate for 30 minutes.
  • Once the 30 minutes are up, slice each dough- log into thick circles, approximately 1 inch in thickness. 
  • Optional: You can also use a toothpick dipped in yellow food color to make some patterns on them, as depicted in the featured images.
  • Arrange the circles evenly over a baking tray, lined with parchment paper.
  • Bake at 180 degrees C for approximately 10 minutes, until the cookies have lightly browned at the edges. Make sure to constantly keep checking on your cookies as they bake super quickly!

Jam Filled Butter Cookies

Ingredients:

  • 115 grams unsalted butter, softened at room temperature 
  • 40 grams granulated sugar
  • 130 grams all- purpose flour
  • 1/3 cup (40 grams) of any Jam of your choice.

Method:

  • In a large bowl, mix the butter, sugar and flour until well combined.
  • Using an identical process as the Lemon Infused cookies, roll the dough into logs and refrigerate for 30 minutes.
  • After taking the dough out of the refrigerator, slice the log into 1 inch circles.
  • Arrange the circles evenly over a baking tray, lined with parchment paper.
  • Use the back of a teaspoon or your thumb to make a dent in the center of each circle.
  • Add in a dollop of jam to the thumbprint created in each cookie.
  • Bake at 180 degrees C for approximately 10 minutes, until lightly browned, making sure to check on them at regular intervals.

Peanut Butter Cookies

Ingredients:

  • 1 cup peanut butter
  • 200 grams granulated sugar
  • 1 large egg
  • Optional: You can substitute the sugar with brown sugar to yield a more butterscotch like flavor. Alternatively, you can also add chocolate chips to add some more flavor to your cookies.

Method:

  • In a large bowl, combine the peanut butter, sugar and egg. Roll the dough into tea spoon sized balls and flatten on a baking tray lined with parchment paper. 
  • Use a fork to add in some cross- hatch patterns onto each of them.
  • Bake at 180 degrees C for 10 mins until the cookies have lightly browned.
